Bikini Recipe

Serves 10 guests

For the Clementine Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

To make the Premix (produces 850ml, serving 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Directions

Making the Syrup: Place all the items inside a pot, bring to a simmer, agitating so the sugar melts. Then, turn off the heat and leave to cool down entirely. Pour to a clean bottle, seal and refrigerate it chilled, it can be stored for up to four weeks.

Preparing the Cocktail Base: Combine every liquids in a large bottle, leave to sit for an hour, then filter it best through a fine cloth, so it's fully clarified.

To serve: Add 85ml of your batch mix to a stirring glass packed with ice, and agitate lightly for one minute to cool it down. Strain into a frosted cocktail glass or a similar vessel, garnish with the cranberries and finish by giving it a quick spritz of mandarin oil over the top.
